Manual harvest and selection of grapes, between the beginning and mid-September. The grapes are crushed and destemmed and remain in the press for a few hours to carry out a pre-fermentation maceration in order to extract a delicate color from the skins. The must that comes out naturally settles before the alcoholic fermentation begins at a controlled temperature in stainless steel tanks. It ages for 6-7 months on fine lees and ends with final assembly and bottling.
